Watermelon Cake
Refreshing fruit served in a cake shape
Serves 8 | Prep 15 minutes
• 1 whole seedless watermelon
• fruit of your choice
Preparation
Cut the watermelon into 3 thick circles.
Cut around each circle to remove the green skin. Use the largest part as a base and stack the other two pieces on top to build a tiered cake. Decorate each ledge with an assortment of fresh fruit. Use a cookie cutter to make shapes or simply place fruit pieces around the tiers and on top. Secure with a few toothpicks. Cover the cake with cling film and store in the fridge until ready to serve. Slice into wedges and serve with a topping of your choice.
Tip - Cut the watermelon into 3 straight chunks, as large as possible. That way they can be trimmed if necessary to make sure they are flat on the top.
