Serves 8 | Prep 5 minutes

• 2 Tbsp unsalted butter

• 230g/8oz light cream cheese

• 1 tsp lime juice

• 1/2 tsp lime zest

• stevia liquid drops to taste

• 1 lime, to decorate


Blend the butter and cream cheese together in a food processor.

Add the lime juice and zest, and mix for 10 seconds. Add the stevia

liquid drops sparingly. Add a few drops or about . tsp. Taste and

add more to the desired level of sweetness. Refrigerate and remove

when ready to ice cooled cupcakes. Cut a lime into thin slices and

place on top of the icing. Makes about 1 cup. 

Tip - Stevia liquid drops-  add a small amount first and adjust to taste. Alternatively use powdered stevia. Stevia a natural, plant based almost zero calorie sweetener with many health benefits. Over many years of cooking, reading, experimenting and research, it's the best sweetener I've found.
