MINUTE MUG CAKE
Serves 1 | Prep 2 minutes Cook 1 ½ minutes
• ½ ripe banana
• 1 egg
• 3 Tbsp coconut milk
• 1 tsp coconut oil, melted
• ½ tsp vanilla extract
• 1 Tbsp coconut flour
• 1 ½ Tbsp cacao powder
• ½ Tbsp granulated stevia
• ¼ tsp cinnamon
• ¼ tsp baking powder
Preparation
Grease a microwave proof mug.
In a bowl, mash the banana until smooth. Add the egg, coconut
milk, coconut oil and vanilla and whisk together with a fork. Add
the coconut flour, cacao, stevia, cinnamon, and baking powder and
mix well.
Pour the mixture into the cup. Microwave for 1 . minutes. Enjoy
directly from the mug or tip upside down onto a plate.
