Banana Bread Bites 

Makes 12 | Prep 10 minutes  

Energizing banana combined with almond flour, coconut and dates, deliver a healthy serving of high quality nutrients in gluten and refined sugar free banana bread bites. 


• 1 ripe banana 

• 100g/3.5oz almond flour 

• 70g/2.5oz desiccated coconut 

• 100g/3.5oz dates 

• ½ tsp cinnamon 

• 1 tsp vanilla extract 

• pinch of salt 



Add the almonds, desiccated coconut and dates to the food processor and pulse into a crumb. Add the banana, vanilla extract, cinnamon and salt and blend to combine. Take out a spoonful at a time and use your hands to shape and roll into 12 balls. Roll in extra desiccated coconut if desired. Place in the freezer to set. Store in the freezer and thaw slightly before biting.
