A big bowl of pasta is one of life's pleasures. I feel good when I'm eating pasta but bloated and tired afterwards. My food intolerance tests revealed this is because of the gluten in pasta made from wheat. I have tried gluten free pasta but it is still processed and does not make me feel energised. For the last couple of years I have been substituting white refined pasta for zucchini noodles. Zoodles add flavour and complement other ingredients in the dish like tomatoes, garlic, herbs, minced meat and prawns. Also called courgette, this vegetable has fantastic health benefits too.
As well as replacing pasta, zoodles are a great addition to salads when added raw. Pour some healthy dressing or sauce over them and I can guarantee you will not miss wheat pasta noodles.
The easiest way to transform vegetables to spaghetti is by using a spiraliser or julienne peeler. A spiraliser is a good investment because it will make many ribbons of zucchini noodles in no time. I purchased mine for about $20 and use it a few times a week in our kitchen.
Alternatively, use a vegetable peeler to make long ribbons of pasta or the wide part of a grater.
Add a teaspoon of oil to a large saucepan and sauté the zoodles for a few minutes until just tender. Use these to replace pasta in any recipe. Spiralise raw zoodles into a large bowl to make a colourful salad. I also spiralise carrot, squash and cucumber. Pad Thai recipe coming soon.
