Almond flour is simply ground almonds.
It is a great alternative to wheat flour as there is minimal processing, no gluten and a huge amount of nutrients. With almond flour, one gets all the health benefits of almonds which are packed with protein, fibre, healthy fats, vitamin E and magnesium. Using blanched almond flour in cakes makes them look similar to regular cakes because it’s creamy white in colour, bakes well and has a sweet and nutty but not overpowering taste. Blanced almond flour is made from almonds with their skin removed. Almond meal/flour is ground whole almonds which works well in brownies. Both can be bought in packets at most supermarkets or health food stores. You can also make your own almond meal by pulsing a packet of almonds in the food processor to create a fine dust. Do not over blend or it will become almond butter! Blanched almond flour can be made by pulsing slivered blanched almonds in the food processor or high-speed blender to make a fine powder. Many Cake Cleanse recipes contain this flour for a nutrient boost but also to satisfy the appetite in a way that traditional cakes cannot.
