Snow Bliss Balls

An energy bite with the flavours of the festive season. They are made by combining natural ingredients which are easy to find at the supermarket. Roll the bliss balls in extra desiccated coconut to make them snowball white.

Makes 16

100g/3.5oz raw cashews
100g/3.5oz white sultanas
200g/7.1oz dessicated cocunut
2 Tbsp honey
1/2 tsp vanilla extract
extra desiccated cocnut for rolling
 

In a food processor or blender add the cashews and pulse to a fine crumb. Add the white sultanas, dessicated cocunut, honey and vanilla and pulse until combined. Take out a spoonful at a time and roll into balls with hands. Finish by rolling through desiccated coconut on a plate to coat. Place in the freezer in an air tight container to set for 1 hour or more. Remove from freezer to serve. Enjoy.
