The star ingredient is sweet potato! This vitamin rich vegetable makes incredibly moist baked treats you can easily make at home. These brownies are chocolatey and fudgy with a hint of orange.
Steam the sweet potato until very soft, cool and then follow the instructions to blend to a smooth batter.
Makes 9 ~600g/21.2oz sweet potato ~200g/7.1oz soft seedless dates ~juice of 1 orange (120mls) ~1 Tbsp finely grated orange zest ~1 tsp vanilla extract ~100g/3.5oz oats ~80g/2.8oz pecans ~1 1/2 tsp baking powder ~ 4 Tbsp cacao powder ~2 Tbsp granulated stevia ~1/2 tsp salt.
Peel then cut the sweet potatoes into small pieces. Place in the steamer for 30 minutes. While the sweet potatoes are cooking, place the dates in a bowl and cover with warm water. Preheat the oven to 180°C/350F°(no fan). Grease and line a 20cm x 20cm / 8" x 8" baking tin. Add the oats and pecans to the food processor and pulse into a very fine flour. Tip into a large bowl and add baking powder, cacao powder, granulated stevia and salt. Drain water from the dates and add dates to the food processor, blend to a paste. Add the steamed sweet potato, orange juice, zest and vanilla and blend to form a smooth batter. Pour the wet ingredients into the dry ingredient bowl and stir to combine. Spoon into the baking tin and smooth the top with spoon dipped in warm water. Bake for 20 minutes. Remove from the oven and allow to rest and set for 10 minutes. Slice into squares. Enjoy!
