I used to eat chocolate bars... a lot of chocolate bars!
Now I snack on these Brownie Bites which truly satisfy my chocolate cravings. The life changing difference is that I no longer overeat. This is because these energy bites are packed with nutrients which make me feel full. I am not on a constant sugar high from store bought chocolate bars. Makes 12 | Prep 10 minutes
• 190g/6.7oz pecans
• 140g/4.9oz, 8 large soft pitted dates
• 1 tsp vanilla extract
• 1/4 tsp salt
• 3 Tbsp cacao powder
Add pecans to the food processor and pulse until fine.
Scoop out 1 Tbsp of ground pecans and set aside on a plate for rolling later.
Add the dates, vanilla, salt, cacao and blend well.
The mixture should have a fine, crumb like texture and be sticky enough to roll into individual bites.
Take out a spoonful at a time and use your hands to roll into 12 balls.
Lightly coat with the pecan crumbs set aside earlier.
Place in the freezer to set for 1 hour or more. Store in the freezer and enjoy 2 each day.
