Banana Mug Cake

1 large ripe banana, mashed                                                                                                                    

1 egg, whisked

2 Tablespoons full fat milk OR almond milk OR coconut milk

1 Tablespoon stevia (measures spoon for spoon like sugar)

2 Tablespoons coconut flour

1 teaspoon coconut oil

1 Tablespoon raw walnuts, chopped

1/4 teaspoon cinnamon

1/4 teaspoon baking powder

pinch of salt

Mash very ripe banana in a small bowl. Whisk egg in another small bowl, add these along with all the other ingredients to a mug. Microwave for 3 minutes.

Here you have a cake on the run when you are super busy and still want to eat something sweet and healthy. I have this for breakfast and an afternoon snack.
