2 Ingredient Cookies
I thought I would put this easy cookie recipe to the taste and texture test. They win as far as being the healthiest cookie around but I wanted to see how well they baked and if they had a depth of flavour. See my verdict after the preparation tips.
Prep 5 minutes Cook 15 minutes
2 ripe bananas
1 cup rolled oats
Preheat oven to 175°C/350°F.
Line a baking tray with parchment paper.
In a food processor, add the oats and pulse into smaller pieces. Add the bananas and blend until combined.
Scoop out even amounts of cookie dough.
Shape into balls with hands. Place on the cookie tray and press down to flatten.
Bake for 15 minutes until golden. Remove from the oven and allow to cool for 15 minutes. Enjoy!
These cookies smelt amazing baking in the oven. I left them to sit on the counter to cool slightly and continue binding together. I am pleased to say they were delicious! Baking the over ripe bananas brings out the sweet, caramel flavour. The cookies have a soft, chewy consistency. They stick together well and are not crumbly. Other ingredients could be added to this cookie dough depending on your taste, for example
½ tsp cinnamon
1 Tbsp almond or peanut butter
¼ cup sugar free choc chips
¼ cup of raisins
I will add cinnamon next time to spice them up a little. Otherwise, I give them an 8/10. Healthy, tasty, homemade and faster than going to the shop to buy a packet of sugar-laden biscuits!
